During harvest, the winery begins a new cycle. As the grapes arrive and their transformation begins, decisions are made whose consequences may only become apparent much later.<\/span><\/p>\n

For a wine intended for ageing, this perspective is part of the project from the outset. The grape variety, winemaking, ageing, bottling time and the conditions in which the wine will spend the coming years all respond to the same question: <\/span>how do we want it to evolve?<\/span><\/strong><\/p>\n

The closure is also part of this equation.<\/span><\/strong><\/p>\n

The Wine Continues to Evolve in the Bottle<\/span><\/h2>\n

 <\/p>\n

Bottling marks the beginning of a new stage. From this point onwards, the wine will continue to evolve in the bottle, with the closure accompanying it throughout this journey.<\/span><\/p>\n

That is why, particularly for wines intended for ageing, it makes sense to consider the closure not only in terms of what happens at the moment of bottling, but also in terms of the role it will need to play <\/span>over time<\/span><\/strong>.<\/span><\/p>\n

It is a question that becomes easier to understand when brought to the glass.<\/span><\/p>\n

When Experience Puts the Closure to the Test<\/span><\/h2>\n

 <\/p>\n

Through <\/span>Without Filters<\/a><\/span>, a J\u00b7VIGAS project, we wanted to bring this reflection into the realm of experience.<\/span><\/p>\n

During comparative tastings, professionals can taste wines in which the only variable that changes is the closure. The wine is the same; what changes is what has accompanied it throughout its evolution.<\/span><\/p>\n

This type of exercise makes it possible to observe something that is not always easy to explain in words: <\/span>decisions made before a bottle is closed can take on a sensory dimension as the wine evolves.<\/span><\/strong><\/p>\n

And this is precisely where the conversation moves beyond the characteristics of the product and becomes part of a broader reflection on the wine.<\/span><\/p>\n

What Wine Do We Want to Find in a Few Years\u2019 Time?<\/span><\/h2>\n

Not all wines follow the same path. Some are intended to reach the glass soon; others are made with a longer evolution in mind.<\/span><\/p>\n

This difference should also form part of the criteria used to choose the closure.<\/span><\/p>\n

It is not only about choosing what we will put into the bottle, but about understanding <\/span>what the wine needs<\/span><\/strong>.<\/span><\/p>\n

A particularly relevant perspective when time is part of the value of the wine.<\/span><\/p>\n

A Decision Within a Broader Project<\/span><\/h3>\n

At J\u00b7VIGAS, we approach stopper selection from this perspective: understanding the wine, its journey and what is expected of it before defining the stopper that will accompany it.<\/span><\/p>\n

Because some decisions are made at the moment of bottling, but we only come to fully understand their significance <\/span>once the wine has had time to evolve<\/span><\/strong>.<\/span><\/p>\n
