Vigas<\/strong> i <strong>Manuel Serra<\/strong>, especialitzades en tap de suro natural, i <strong>Francisco Oller<\/strong> i <strong>TESA<\/strong>, que elaboren taps de suro aglomerats amb dos discos per a vi escum\u00f3s. Tamb\u00e9 ha comptat amb la col\u00b7laboraci\u00f3 del <strong>Comit\u00e8 Champagne<\/strong> i l&#8217;<strong>Institut de Ci\u00e8ncies de la Vid i el Vi de la Universitat de La Rioja.<\/strong><\/p>\n<p>L&#8217;objectiu principal d&#8217;aquest estudi era corroborar si les difer\u00e8ncies identificades a nivell de laboratori de l&#8217;assaig de permeabilitat a l&#8217;oxigen dels taps de suro es podien apreciar al vi. La consecuci\u00f3 d&#8217;aquest objectiu ha perm\u00e8s, d&#8217;una banda, validar el m\u00e8tode d&#8217;an\u00e0lisi i, de l&#8217;altra, adquirir coneixement sobre el proc\u00e9s d&#8217;elaboraci\u00f3 dels taps de suro i la influ\u00e8ncia que t\u00e9 en la permeabilitat a l&#8217;oxigen.<\/p>\n<p>&nbsp;<\/p>\n<blockquote>\n<h2>Entre altres conclusions, s&#8217;ha determinat que l&#8217;aportaci\u00f3 d&#8217;oxigen despr\u00e9s del tapat amb un tap de suro correctament embotellat prov\u00e9 del tap de suro propi i no de l&#8217;ingr\u00e9s d&#8217;oxigen extern<\/h2>\n<\/blockquote>\n<h3>La import\u00e0ncia de l&#8217;OTR (OxygenTransferRate)<\/h3>\n<p>&nbsp;<\/p>\n<p>L&#8217;evoluci\u00f3 del vi \u00e9s molt dependent de la quantitat d&#8217;oxigen que rep. L&#8217;oxigen interv\u00e9 de manera crucial en tot el proc\u00e9s enol\u00f2gic, des de la recollida del ra\u00efm fins a l&#8217;obertura de l&#8217;ampolla i el consum del contingut. Diversos estudis demostren que el mateix vi tapat amb taps amb diferent permeabilitat poden <strong>evolucionar de manera diferent<\/strong>.<\/p>\n<p>Per aix\u00f2, despr\u00e9s de l&#8217;embotellat, l&#8217;exposici\u00f3 a l&#8217;oxigen dep\u00e8n de l&#8217;efici\u00e8ncia del tancament. La permeabilitat de cada taponament es mesura com la taxa de transfer\u00e8ncia d&#8217;oxigen (OTR) o oxigen que entra a l&#8217;ampolla al llarg del temps (mg O 2 ).<\/p>\n<p>Actualment <strong>no hi ha una metodologia normalitzada<\/strong> per quantificar la permeabilitat a l&#8217;oxigen d&#8217;un tap. Tot i aix\u00f2, la Fundaci\u00f3 Institut Catal\u00e0 del Suro coordina el grup de treball UNE CT56\/SC5 per implementar-la. L&#8217;ICSuro va comen\u00e7ar la investigaci\u00f3 en aquest camp el 2016.<br \/>Per fer un estudi acurat de com el proc\u00e9s productiu pot influir en la permeabilitat dels taps de suro, s&#8217;han estudiat diversos par\u00e0metres en la producci\u00f3.<\/p>\n<p>En el cas dels taps naturals per a vi tranquil, s&#8217;han monitoritzat <strong>el proc\u00e9s i el tipus de rentat, el tipus d&#8217;igualat o el tractament superficial<\/strong>.<\/p>\n<p>En el cas dels taps per a vins escumosos, s&#8217;han analitzat <strong>el nombre de discos, la qualitat i la densitat dels discos, el tractament superficial o la qualitat i la compressi\u00f3 de l&#8217;aglomerat.<\/strong><\/p>\n<h3><\/h3>\n<h3>Conclusions<\/h3>\n<p>&nbsp;<\/p>\n<p>Despr\u00e9s de cinc anys d&#8217;estudi, s&#8217;han assolit les conclusions seg\u00fcents:<\/p>\n<ul>\n<li>L&#8217;aportaci\u00f3 d&#8217;oxigen despr\u00e9s del tapat amb un tap de suro correctament embotellat <strong>prov\u00e9 del mateix tap de suro<\/strong> i no de l&#8217;ingr\u00e9s d&#8217;oxigen extern.<\/li>\n<li>La <strong>permeabilitat a l&#8217;oxigen<\/strong> dels taps i les <strong>condicions d&#8217;emmagatzematge<\/strong> del vi s\u00f3n par\u00e0metres clau per assegurar-ne l&#8217;estat organol\u00e8ptic correcte. Aquests tenen influ\u00e8ncia en levoluci\u00f3 del vi tranquil a nivell anal\u00edtic i sensorial.<\/li>\n<li>El <strong>proc\u00e9s d&#8217;embotellat<\/strong> (regularitat i control de l&#8217;ingr\u00e9s d&#8217;oxigen) s&#8217;ha reafirmat com a <strong>punt cr\u00edtic<\/strong> i important per obtenir l&#8217;evoluci\u00f3 del vi desitjada.<\/li>\n<li>La <strong>posici\u00f3 de l&#8217;ampolla<\/strong> despr\u00e9s del tamponament \u00e9s fonamental i els resultats obtinguts canvien en funci\u00f3 de si s&#8217;emmagatzema verticalment o horitzontalment.<\/li>\n<li>El temps de recuperaci\u00f3 del tap immediatament despr\u00e9s del tapat, d&#8217;<strong>un a cinc minuts<\/strong>, s&#8217;ha de respectar i les ampolles no s&#8217;han de moure o emmagatzemar en posici\u00f3 horitzontal fins passat aquest temps.<\/li>\n<li>Les empreses participants han <strong>caracteritzat<\/strong> els seus processos productius pel que fa a la contribuci\u00f3 a la permeabilitat a l&#8217;oxigen.<\/li>\n<li>El coneixement adquirit durant el projecte ha de permetre modular el proc\u00e9s de producci\u00f3 per augmentar <strong>l&#8217;homogene\u00eftat<\/strong> dels taps de suro natural.<\/li>\n<li><strong>L&#8217;oxoluminesc\u00e8ncia<\/strong> s&#8217;ha validat com a m\u00e8tode de mesura de la permeabilitat a l&#8217;oxigen per taps de suro, ja que les conclusions extretes a nivell de laboratori s\u00f3n extrapolables al vi.<\/li>\n<li>En vi escum\u00f3s no s&#8217;ha pogut verificar que l&#8217;OTR tingui una incid\u00e8ncia definitiva sobre el perfil organol\u00e8ptic del vi.
